Report on the historic mustard mill in Cologne

Nowadays there are countless spices on the shelves of the retail trade , with which dishes can be refined in all possible flavors. For centuries, however, people had only had mustard and horseradish at their disposal to bring tasty dishes to the table. In addition, the healers of that time were already aware that mustard seeds contain essential oils. They used the healing effect on the human body for wraps, baths or ablutions and thus helped to alleviate various complaints of their patients.

Healing and Enjoyment

The use of mustard has a long tradition both in the kitchens of the world and in natural medicine. Those interested in learning more about the traditional production and use of mustard should take the time to pay a visit to the historic mustard mill in Cologne. Today it is assumed that the origin of the mustard mill, which is used here in its original form, goes back to the 18th century. This makes it one of the oldest spice mills in the world and, lovingly restored, still reliably does its job.

Watch the production process

In the middle of the old town of Cologne , located at the Holzmarkt, visitors can watch the mustard millers during production seven days a week and taste different types of mustard. On the basis of two traditional recipes from the 15th and 18th centuries, which are strictly guarded as a trade secret, mustard is produced here according to an old tradition. The mustard millers understand their craft. They clearly show visitors how mustard seeds can still be processed today without the use of additional machines in what is known as a cold grinding process , just as it corresponds to the age of the mill.

Heavy millstones

With the help of transmission belts, the mustard seeds are ground to a fine powder between the 525 kilogram grindstones made of basalt-lava stone without heating and then processed into mustard in different flavors using exclusively natural spices and oils. This process makes it possible to produce mustard in a gentle way . Both the essential oils and all other ingredients of the mustard seed are completely retained and not only serve a culinary experience, but also contain a health aspect. The result of this historically handed down manufacturing process can then be tasted and also bought.

Guided tours

The mill works tirelessly: Open daily from 10 a.m., guided tours take place here every hour between 12 p.m. and 4 p.m., lasting around 30 minutes and providing insights into traditional craftsmanship.

The production

Only about 180 kilograms of mustard are produced here every day, but quality comes before quantity. The mustard is filled into traditional earthenware pots in an environmentally friendly manner and without the addition of flavorings or preservatives, which means it can be kept for two years without being refrigerated. In the historic mustard mill in Cologne , everything really revolves around the mustard seed. After the tour and tasting, you can buy not only the mustards themselves, but also cookbooks with unusual recipes for everything to do with the healthy spice.

Homemade jams, liqueurs, schnapps and sausages invite you to try them and illustrate what is possible with mustard. Last but not least, the historic mustard mill in Cologne also sells mustard seeds and flour in natural form for health-promoting baths and wraps.
